Nam prik ong is a spicy Thai dip/paste made with pork and tomatoes. It can be served with an assortment of fresh vegetables or sticky rice!

Ingredients

Paste:

  • 150 g minced pork
  • 120 g cherry tomatoes
  • 5 sun dried chilies
  • 2 Tbsp shallot
  • 2 Tbsp garlic
  • 3 Tbsp olive oil
  • 1 tsp galangal
  • 2 stalks lemongrass
  • 1 tsp dry bean paste or 1 tsp vegan shrimp paste

Seasoning:

  • 1 Tbsp palm sugar
  • 2 Tbsp fish sauce
  • 1/2 cup water

Directions

Grind the chilies, shallot, garlic, galangal, lemongrass, and dry bean paste or vegan shrimp paste in a mortar and pestle (you can also use a food processor if you do not have a mortar and pestle). Then heat the oil in a saucepan. Add the paste mixture and let it warm up for about a minute. Then add the minced pork, cherry tomatoes, and seasoning ingredients. Cook until meat is cooked through and tomatoes are soft.
